Instructions
  1. In a mixing bowl combine dry ingredients: flour, baking soda, baking powder, salt and sugar; set aside.
  2. In a separate bowl combine zucchini, coconut oil, egg, lemon juice and peel. Stir to combine.
  3. Fold dry and wet ingredients, just until combined.
  4. Pour batter into a greased bread pan.
  5. Bake at 175°C for 50min. Until golden brown.
  6. Cool in the pan for 15 min, then remove from then pan and cool completely.
