Cake
  1. Pre-heat the oven to 200C. Whisk eggs and sugar until fluffy and light. The mixture should double in volume.
  2. Melt butter in the microwave add milk, vanilla and grated marzipan, stir and pour into the egg mixture. Mix until combined.
  3. In a separate bowl, mix flour with baking powder. Add to the wet ingredients and fold gently until combined. Don’t over mix the dough as it will become heavy and lumpy.
  4. Pour the mixture into a baking pan lined with baking sheet and bake for 20 min.
  5. While baking prepare the topping.
Topping
  1. In the saucepan, melt butter. Add milk and sugar, boil around 1min. The mixture will be very bubbly.
  2. Remove from the heat, add coconut shreds add mix until combined.
  3. Remove the cake from the oven and spread the topping evenly.
  4. Pop in the oven for another 10 min.
  5. Cool to the room temp before serving.
